做(zuò )法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
