做法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐(yán ),翻炒均(jun1 )匀(yún )稍收汁时(shí )盖上锅(guō )盖焖(mèn )。
