做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
